Can these fit a Mediterranean-style breakfast?

Whole-grain bread, fruit, plain yogurt and nuts can form a Mediterranean-inspired breakfast. A dietary pattern is about your overall choices, rather than one recipe; our sweeter and cheese-based options offer variations, not a prescribed diet.

Are these low-GI sourdough recipes?

We have not measured the glycemic index (GI) of these recipes, so we do not label them low GI. “Sourdough” alone is not a GI rating, and adding yogurt or fruit does not establish the GI of the finished meal. If you follow a low-GI diet, choose bread with a verified GI rating and consider portions and the rest of your meal.

Can I use leftover sourdough?

Yes, if it is still sound and has been stored appropriately. Firmer slices work well for French toast; smaller pieces can become crisp bowl toppings. Moldy bread should be discarded. Read the bread storage guide.
