Ingredients

  • 2 slices (120 g total) unseeded sourdough, about 1.5 cm / ⅝ inch thick
  • 150 g stracciatella cheese made with pasteurized milk
  • 60 g ready-to-eat prosciutto, thinly sliced
  • 1 tbsp (21 g) honey
  • ¼ tsp mild red chili flakes
  • ⅛ tsp freshly ground black pepper, optional

Method

  1. Prepare the chili honey

    Put the honey in a small heatproof cup. Stand it in a bowl of hot tap water for 1–2 minutes until loose enough to drizzle, then stir in the chili flakes. Keep water out of the honey and taste a tiny cooled drop to check the heat.

  2. Toast and cool briefly

    Toast the sourdough on both sides for about 3–5 minutes until golden and crisp. Rest on a rack for 1–2 minutes so the slices are warm rather than steaming.

  3. Add the cheese

    Lift the stracciatella from any excess loose liquid, keeping its creamy strands. Divide it between the toasts, about 75 g each, and spread gently with the back of a spoon.

  4. Drape the prosciutto

    Lay 30 g prosciutto over each toast in loose folds so some of the cheese stays visible. Drizzle each with half the chili honey and add the optional black pepper. Serve immediately.

Small things that help

Keep the prosciutto delicate
Separate the thin slices before assembly and drape them loosely. Compressing them into a thick layer makes the toast harder to bite.
Adjust heat before serving
Chili flakes vary widely. Start with half the amount if yours are particularly hot, then add more to taste; the honey should still drizzle thinly.

Make it your own

Use burrata
Split a 150 g burrata ball, then divide its torn outer cheese and creamy center between the toasts. Drain excess liquid before assembly.
Use ready-made hot honey
Use 1 tbsp of a prepared chili honey instead of the honey and flakes. Check the heat level before using the full amount.
Use ricotta
Spread 150 g thick whole-milk ricotta between the two slices. The result is firmer and less flowing than stracciatella, but works with the same prosciutto and honey.

Make ahead & storage

Keep the cheese and prosciutto refrigerated at 4°C/40°F or below and follow their opened-pack instructions. Assemble only what you will eat now. Refrigerate perishable leftovers within 2 hours, or 1 hour above 32°C/90°F; store spare cheese, meat and bread separately.

Contains wheat, milk and pork. Prosciutto already supplies salt, so no extra salt is added. The tablespoon of honey is divided between the two toasts.

Before you start

Is stracciatella the same as yogurt?

No. This recipe uses fresh stracciatella cheese, with soft creamy strands. Plain yogurt has a different flavor and consistency and is not the topping used here.

Do I need to cook the prosciutto?

Choose a product clearly labeled ready to eat and follow its package directions. This recipe serves it cold and does not cook it on the toast.

What does hot honey mean here?

Honey flavored with chili. Warm water simply loosens it for drizzling; it does not need to be served hot or boiled.
