Which calculator should I use?
Use the dough calculator to check an existing recipe’s hydration, find how much water a target hydration needs, or plan a dough by weight. Use the starter-feeding calculator to prepare the amount your recipe needs while keeping a reserve.
Does hydration include the starter?
Yes. Total hydration includes all the flour and water in the starter as well as the fresh ingredients. A 100 g starter at 100% hydration contributes 50 g flour and 50 g water. Check whether your recipe already states totals before adding those amounts again.
What does a 1:2:2 feed mean?
On this site the order is starter : fresh flour : fresh water, by weight. For example, 20 g starter + 40 g flour + 40 g water makes 100 g. The ratio sets quantities; temperature and starter activity also affect when it reaches its peak.
Getting started
Why has my starter stopped rising?
First distinguish a new starter from a mature one that used to rise reliably. Check the actual temperature, weighed feed, and whether it rose and fell before you looked. Bubbles alone do not tell the whole story; follow the troubleshooting guide for the next checks.
Which flour should I start with?
Follow one established starter or bread recipe and use the flour it specifies before changing several things at once. Bread flour, all-purpose flour, whole wheat, and rye can behave differently. The flour guide explains labels, water absorption, and substitutions.

Who writes this site, and where do the explanations come from?
Sourdough Bench is the operating and editorial brand name. Guides link to published baking references, explain assumptions, and identify examples. A worked calculation or brand byline is not a claim of a personally tested loaf or a professional baking qualification.
How do I report a mistake?
Email the page address, the sentence or inputs in question, and what you expected. Include units and starter hydration for calculator issues, or a supporting source for a content correction. Leave out passwords and unrelated sensitive information.
Your data
Are my inputs and bake notes saved?
Calculations run in your browser; there is no account or automatic backup. The planner and bake log can transfer entries once when you switch among the eight languages in the same tab. Download work you want to keep. Analytics, language storage, and this temporary transfer are explained in Privacy.
What is included when I share a link?
The page-share buttons share a page link. A calculator’s own share-link control includes its numerical settings, so anyone receiving that link can read them. Check the link before sharing. A service you choose to share through handles the information under its own privacy rules.
