Paprika Chickpea and Yogurt Sourdough Toast

Canned chickpeas make this a straightforward savory topping: dry them well, roast until the outsides firm up, then add smoked paprika near the end. The yogurt underneath catches the chickpeas and gives a cool contrast.
Use a knife and fork for this one. It is a generously topped toast, with lemon and finely chopped parsley to lift the earthy chickpeas.

Ingredients
- 2 slices (120 g total) unseeded sourdough, about 1.5 cm / ⅝ inch thick; white or whole-grain
- 200 g drained weight canned chickpeas, rinsed
- 2 tsp (10 ml) olive oil
- ½ tsp smoked paprika
- 160 g plain thick Greek yogurt
- 2 tsp (10 ml) lemon juice
- ½ tsp finely grated lemon zest
- 1 tbsp finely chopped fresh parsley
- 1 small pinch fine salt, optional
Method
Dry the chickpeas
Heat a conventional oven to 220°C/425°F, or a fan oven to 200°C. Drain and rinse the chickpeas, then weigh 200 g. Roll gently in a clean towel to dry the surfaces; remove any loose skins that come away easily.
Roast with oil
Toss the chickpeas with the olive oil and optional salt. Spread in a single layer on a baking tray. Roast for 22–27 minutes, shaking the tray halfway, until the outsides feel dry and some chickpeas turn golden.
Add paprika at the end
Sprinkle the paprika over the hot chickpeas, toss carefully and return to the oven for 2–3 minutes. Remove before the spice darkens too much. Let stand for a few minutes while you finish the bread.
Prepare the base
Toast the sourdough until crisp. Mix the lemon juice into the yogurt and spread half over each slice once the bread has stopped steaming.
Top and serve
Divide the warm chickpeas between the toasts, pressing them very lightly into the yogurt. Add the parsley and lemon zest. Eat straight away while the chickpea surfaces are at their crispest.

Small things that help
- Drying matters
- Wet canned chickpeas take longer to roast and may stay soft outside. A clean towel removes more surface water than draining alone.
- Expect crisp edges, not packaged-snack crunch
- The centers can stay tender. Oven strength, chickpea size and drying all change the result, so use the surface texture as well as the timer.
- Save extra chickpeas separately
- Once mixed into yogurt, the chickpeas soften. Roast only what you need for the best contrast, or store the components separately.
Make it your own
- Use sweet paprika
- Replace smoked paprika with the same amount of sweet paprika for a milder aroma. Add a pinch of cayenne only if you want heat.
- Use cooked dried chickpeas
- Use 200 g already-cooked, well-drained chickpeas in place of canned. This recipe’s timing does not include soaking or cooking dried chickpeas.
- Change the herb
- Use finely chopped mint in place of parsley. Start with 2 tsp, taste and add more if desired.
Make ahead & storage
Refrigerate chickpeas and yogurt separately at 4°C/40°F or below within 2 hours, or 1 hour above 32°C/90°F. Use prepared chickpeas within 2 days for best texture; they will soften in storage. Toast and assemble fresh.

Is this chickpea toast suitable for a low-GI diet?
The finished recipe has not been GI tested. Chickpeas alone cannot establish the toast’s rating; the bread and portion also matter.
Can I skip the roasting?
Yes. Use the rinsed, drained canned chickpeas as they are and mix with the oil, paprika and lemon zest. The topping will be soft rather than crisp; keep the yogurt and herb amounts unchanged.
Can I roast a whole can?
Yes. Weigh the drained chickpeas and increase the oil and paprika proportionally. Use a larger tray if needed so they stay in one layer. Keep any extra roasted chickpeas separate from the yogurt and refrigerate them promptly.
